How much Aquafaba® do I need to replace an egg?
50ml of Aquafaba equals 1 whole egg. 30ml of Aquafaba equals 1 egg white.
What does it taste and smell like?
It’s a brown liquid with a sweet, mild chickpea scent. Once whisked, it turns lighter in color and becomes a white foam. Its flavor is neutral, making it versatile for a variety of dishes without altering the final taste.
Why is Aquafaba® more sustainable?
Replacing one ton of egg protein with chickpea protein reduces greenhouse gas emissions by approximately 35,768.5 kg of CO2e. This significant reduction reflects the lower carbon footprint of chickpea production compared to eggs.
Additionally, using Aquafaba instead of eggs improves the living conditions of hens and reduces animal exploitation.
How do I store it?
Once you discover all that Aquafaba® can do, it will become a pantry staple. If unopened, it retains its properties for up to 3 years. If you don’t use all the contents after opening, close the container tightly, and it will last in the fridge for 7 days. You can also freeze it in the container or in ice trays, extending its shelf life to 3 months.
Can I use the water from canned chickpeas?
Yes, you can. However, each brand of canned chickpeas may behave differently, affecting the final result. Most also contain additives, high amounts of salt, and pesticides, as they are not organic.
