Vegan Tiramisu Plant

What if we told you that this mint plant is actually a delicious tiramisu? And even more, that it’s 100% plant-based? This recipe is from our exceptional chef Valentí! He designed it to be easy for you to make with just 7 ingredients and 20 minutes. Surprise your guests or special someone, just as we were surprised!

Ingredients

  • 750g plant-based mascarpone
  • 165g erythritol (a natural sugar alternative)
  • 100g plant-based liquid cream
  • 125g Casa Amella® Aquafaba (plant-based egg white substitute)
  • 160g sponge cake
  • 2 cups coffee
  • 50g cocoa powder
  • Mint leaves
  • Oreo cookies (optional)

Preparation

In a bowl, mix the plant-based mascarpone with erythritol. In another bowl, whip the aquafaba until stiff peaks form (125 ml = about 3.5 minutes using a mixer on speed 3.5, or 4 minutes with electric whisks). Whip the plant-based liquid cream in a separate bowl.

Fold the whipped aquafaba and whipped cream into the mascarpone mixture. In another bowl, soak the sponge cake in 2 cups of coffee until the cake pieces break down.

Assemble the tiramisu in a container of your choice, like a small dish or even a flower pot as our chef did. Layer the mascarpone mixture, followed by the soaked sponge cake, and another layer of the mascarpone mixture until the container is full.

Finish by sprinkling cocoa powder on top and optionally grating an Oreo cookie (without the cream). Add a mint leaf for the final touch and impress your special someone!
